FRIDAY FIVE: Frozen Cocktails
It is officially summer in Naples which means it is HOT! Now that we’re spending more afternoons at the pool and weekends at the beach or out on the boat, I wanted to try out a couple of new frozen cocktail recipes and these were my faves! All of them are SUPER easy and don’t necessarily require top shelf so they are perfect to throw together while still making yourself look like a professional mixologist! Enjoy!
1. Prosecco Slushies
What could be fancier than Prosecco Slushies? ABSOLUTELY NOTHING! This cocktail is easy to make for a large group so it is perfect for birthday parties, bridal showers, pool parties and of course, boozy brunches!

2 c. Prosecco (I prefer a drier bottle!)
1/2 c. Vodka
1 1/2 c. Chopped Strawberries
1/4 c. Lime Juice
Ice
Mint and Lime, for Garnish
Instructions
In a blender, combine prosecco, strawberries, lime juice, and vodka. Fill the blender halfway with ice and blend all ingredients until the mixture resembles a slushie.
Pour slushie in glasses and garnish with a mint sprig and a thin wheel of lime!
2. Margarita Snow Cones
A boozy version of my favorite treat as a kid, this is another easy yet impressive cocktail that will make you the hit of every party!

1 tbsp. Honey
2 c. Ice

In a blender, blend ice until it resembles shaved ice.
Using an ice cream scoop, scoop shaved ice into glasses and then pout tequila mixture over shaved ice. Garnish with lime round or wedge.
3. Frozen Prosecco
Another killer prosecco cocktail, this will become a staple in your freezer during the summer! Keep in mind, it does take a bit of planning ahead but is easy to throw together the day of!

In a medium saucepan, stir together sugar and water. Cook over medium heat until sugar is dissolved. Transfer to large bowl and let cool. If you’re pressed for time, set the bowl in a bowl of ice water.
Stir prosecco, lemon juice and zest into simple syrup and pour into a 9x13 pan and freeze for 2 hours. Scrape mixture with a fork and place back in the freezer. Repeat process every 30 minutes for 2 more hours. Then, cover until ready to use.
Serve in flute glasses and top with a bit extra prosecco!
